I've periodically had this same question. I always come back to Bear though. Markdown alone might be enough, but the workflows I now have with Alfred and Shortcuts put Bear far above Notes. And 2.0 is now out!

I updated to the 2.0 release from the beta today. Rather than delete the beta I renamed it, then downloaded the release. So far so great.
