[DS3] Lothric knight statue decapitation after placing the Basin of Vow. Why?

I noticed that in other runs the knight just cuts his throat without decapitation. What interaction triggers the knight to cut off his head? I can't find anything online about this.

I just finished my first run as hollow, however I can't explain this.
